Chicken thighs made extremely savory by coconut vinegar and garlic marinade, then finished succulent and crisp in the air fryer. This dish alone has brought Filipino cuisine to the world food map.

INGREDIENTS:

• 400 grams Chicken Leg Quarters

• 3 cloves Garlic, crushed

• ¼ cup Coconut Vinegar

• 1 tbsp Soy Sauce

• 2 Dried Bay Leaves

• 6 Black Peppercorns

• 1 tsp Salt

• 2 tbsp Coconut Oil

PREPARATION:

Marinate chicken legs in coconut vinegar, crushed garlic, soy sauce, bay leaves, black peppercorns, and salt for at least 4 hours.

Take chicken out of the marinade and leave to come to room temperature.

Toss chicken in coconut oil.

Arrange in the frying basket and cook for 10 minutes at 350F.

Flip and cook for another 10 minutes.
